Alluring, intriguing, and sexy! These are the words that spring to mind when trying to describe the 2009 Raventos i Blanc De Nit Rosé, a Reserva-style Cava. Produced in the méthode champenoise, the De Nit is a blend of traditional Cava grapes — 55 percent Macabeo, 20 percent Xarello, and 20 percent Parellada — with a touch of Monastrell added for both complexity and its pale-salmon color. Subtle, elegant and focused, the De Nit has tiny, linear bubbles that release aromas of rose petal, wild cranberry and subtlest hints of strawberry. A dry and delicate finish leaves the palate fresh, while its balance makes it a remarkably versatile wine to pair with almost any type of food — from California rolls to sweet and sour chicken to even pulpo a la Plancha, grilled octopus with olive oil and potatoes.
