I recently was reminded of how very, very great one of my favorite bottles is- the Vina Tondonia Blanco from 1989. I was at home with precious little "drinking" bottles remaining in my wine unit- just a bottle of great Riesling from Kueka Lake winery. I needed wine for a dinner my amazing wife made for us of fresh Chantarelles over pasta with parmesan cheese. Just amazing. I love simple fresh food that's cooked to perfection and delicious. The wine I chose was the Tondonia- and it went beautifully with the food. The earth of the mushrooms went great with the earth in the wine, and the caramel and toast of the oak paired very well with the salt in the cheese. Just an optimal pairing- really fun food and wine, and a great way to relax after a tough day here during the holiday season.
